All righty, gang!

The good news is that if, this summer -- like me -- someone gave you the most enormous homegrown zucchini you've ever laid eyes on in your life and you can't imagine what you're going to do with it....

An older lady that I was chatting with about gardening yesterday, told me that she also had been given an enormous zucchini and that she wound up making zucchini parmegiana with it. So I tried it -- i.e., making eggplant parmagiana only using zucchini slices instead. It is fantastic!! So try it!!

(PS: This is not anyone I know. This is a little boy named Zach who was apparently another happy recipient of a giant zucchini this summer!)
